The Chair of the Donegal Food Response Network, Mary Coyle, was honoured to deliver a guest lecture to dietetic students at Atlantic Technological University.
Mary outlined the extensive support the network provides to individuals and families experiencing food poverty, explaining how local food banks operate, how surplus food is sourced, and how it is distributed to those most in need. She also highlighted the ongoing challenges around food security in Donegal, sharing powerful insights from her frontline experience.

Laura McGoran, Donegal Local Development CLG (DLDC) Food Equality Specialist Officer, joined Mary to discuss the impact of the PeacePLUS-funded Food Quality Initiative. She also introduced Balance – Healthy and Affordable Cooking for All, currently in its pilot phase, which supports people to build practical cooking skills, improve nutrition, and stretch limited food budgets further.
It was a thought provoking and engaging session, encouraging students to think critically about the practical challenges and opportunities linked to the Donegal Food Response Network’s strategic plan.
